I made enchiladas for dinner.
I found the best enchilada sauce recipe, so they have quickly become one of my favorite meals. There’s just nothing like homemade! The only downside is the assembly. It’s really the time-consuming part of the meal. And getting the perfect ratio of all components is no small task.
Most times, there seems to be a little extra this or that or not enough of something else. So when I totally nailed it this time, I couldn’t have been more pumped. The perfect amount of tortillas, filling, sauce, and cheese came together in my tray.
I was so excited about my accomplishment that I announced it to all in the house.
Not surprisingly, they didn’t entirely get it. My sweet success left me walking tall, large, and in charge, chin up, tits out. It’s the little things, really.
