I love a good cheesecake. It’s one of my favorite desserts. So when I stumbled upon a pumpkin cheesecake recipe, I was definitely feeling it. I don’t drink pumpkin spice lattes, but I will tear up a pumpkin cheesecake or pumpkin bread.
This recipe was absolutely delicious. One of the best I’ve had. The only downside I’d say, is that it required the patience of Job. We literally didn’t cut into for almost two days after baking. It required 24 hours of rest for crying out loud. Seriously?!
Apparently going through the baking process to be turned into something delicious is exhausting.
